Without fail whenever I think about food (which is probably around every 15 minutes or so, give or take a minute), my mind wanders to that glorious Mexican food stuff that is the adaptable taco. And queso dip – because who never not thinks of queso dip?
But back to the taco.
Ah, the taco. What can’t there be said about it?
For me personally I love soft shells, rolling up the deliciousness of pulled spiced chicken (or pork), guac, sour cream, fried onions and peppers, queso, shredded cheese, jalapenos, whatever I can stuff into that small circle of rapture. The first bite of all that goodness is one of the few unburdened pieces of happiness one can find. Aside from drinking margarita’s on the beach that is.
The best thing about tacos is that they aren’t limited to just Mexican food. They can be anything! I, myself, love some Moo Shu Pork Tacos. And who doesn’t love any restaurant that supports Taco Tuesdays? I mean fish tacos are legit on point and always make me feel like I’m getting away with a healthy option on a restaurant menu while still fulfilling everything I’m looking for in a splurge day. Mainly because whatever sauce it is they put on those fish tacos is sooo good.
So in the spirit of Taco Tuesday I’ve gathered some of the best taco recipes there are. Another great thing about tacos is how you can make them on the weekend for your weekly lunch meal prep. There are also some Quesada recipes thrown in because – why not? Honestly – has anyone ever said anything bad about tacos? If so, unfriend them at once. You don’t need that negativity in your life.
